Abstract

A careful study of the literature on the viability of the typhoid organism reveals a startling lack of agreement. Potter, in a series of experiments, comes to the conclusion that if a repressing effect occurs on B. typhosus because of the acidity of milk due to souring, it is so small as to be negligible and as a consequence such acidity cannot be depended upon to eliminate the organism. Baker, after experimenting on milk and butter, isolated the typhoid organism after 45 days from milk and after 151 days from butter. Frankel and Kister find the typhoid organism perishing in three days in raw buttermilk held at 22°C and after 24 hours when held at 37°C.
