Abstract
When thinking about producing syrup from trees, most people's minds go straight to maple trees. However, a variety of other species in the Intermountain West can be tapped for sap, including other maple species, birch, sycamore, aspen, and walnut. This fact sheet reviews alternative tree species for syrup production in Utah.
